Russet potatoes (peeled, boiled)

potato starch

3 cup

warm water (warm)

garlic cloves (minced)

Boil the potatoes

Cook the potatoes until they are soft and mashable.

Make the noodle dough

Mash the cooked potatoes and combine with potato starch, warm water, and salt to form a smooth dough.

Shape the noodles

Roll the dough into thick noodle-like shapes.

Boil the shaped potato noodles until they float to the surface.

Combine garlic, green onion, soy sauce, black vinegar, gochugaru, and sugar in a heat-safe bowl.
