Instructions
Preheat oven
Preheat oven to 180°C (350°F). Line two baking sheets with parchment paper.
Mash bananas
Mash ripe bananas in a large bowl until smooth.
Cream butter and sugars
In a separate bowl, beat softened butter with brown sugar and granulated sugar until light and fluffy.
Add wet ingredients
Add egg and vanilla extract to the butter mixture, beat until combined. Then stir in mashed bananas.
Combine dry ingredients
In another bowl, whisk together flour, baking soda, and salt.
Mix dough
Gradually add dry ingredients to wet ingredients, mixing until just combined. Fold in chocolate chips and walnuts.
Chill dough
Chill dough for 15-20 minutes to prevent spreading.
Scoop and bake
Scoop tablespoon-sized balls of dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes until edges are golden.
Cool cookies
Let cookies cool on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
