Melt the dark chocolate and butter together over a bain-marie until smooth.

Separate the eggs. Whisk the yolks with half the sugar until pale and creamy.

Gently fold the melted chocolate mixture into the egg yolks.

Whip the egg whites with the remaining sugar to stiff peaks.

Gently fold the whipped egg whites into the chocolate mixture in three additions.
