Instructions
Prepare the dressing
Mix all dressing ingredients in a small bowl until sugar dissolves completely.
Assemble the salad
In a large bowl, combine shredded cabbage, carrots, red onion, chicken, herbs, dressing and olive oil.
Serve with garnish
Plate the salad and serve topped with chopped peanuts, fried shallots and lime wedges.
