Homemade Tomato Sauce

Instructions
Prepare vegetables
Wash and chop all vegetables into large pieces for easier cooking and blending.
Sauté onion and garlic
Heat olive oil in a large pot and sauté onion and garlic until fragrant.
Add tomatoes and peppers
Add chopped tomatoes, bell peppers, and chili peppers to the pot.
Simmer the sauce
Bring to a boil, then reduce heat and simmer uncovered for 1.5 hours, stirring occasionally.
Season the sauce
Add sugar, salt, vinegar, and all spices. Continue simmering for 30 minutes.
Add fresh herbs
Stir in fresh herbs and simmer for final 10 minutes.
Blend the sauce
Remove bay leaves and blend the sauce until smooth using an immersion blender.
Cool and store
Allow sauce to cool completely before transferring to sterilized jars.

Store in sterilized jars. For longer storage, process jars in boiling water bath for 10 minutes
