Instructions
Prepare vegetables
Shred the potatoes, julienne the carrot, trim green beans, mince garlic, and slice chili peppers.
Cook noodles
Boil the noodles according to package instructions until al dente.
Stir-fry vegetables
Heat oil in a wok, add garlic and chili, then stir-fry potatoes, carrots, and green beans until tender-crisp.
Combine and season
Add drained noodles to the wok, pour in soy sauce, season with salt and pepper, and toss everything together.
Serve
Transfer the spicy potato noodles to plates and serve hot.
