Instructions
Prepare the rice
Rinse the rice under cold water until the water runs clear.
Cook the rice
Place the rice in a pot with water (1:2 ratio), add a pinch of salt and bring to a boil. Reduce heat and simmer covered for 15 minutes.
Prepare the chicken
Cut chicken thighs into bite-sized pieces and season with salt and pepper.
Fry the chicken
Heat oil in a pan and fry the chicken until golden and cooked through.
Scramble the eggs
Push chicken to the side, add beaten eggs and scramble until just set.
Add vegetables and sauce
Add peas and soy sauce to the pan, stir well and cook for 2 minutes.
Combine with rice
Add the cooked rice to the pan, mix everything together and heat through.
Storage
Store in an airtight container. Reheat with a splash of water to restore moisture.
