Fry the bread and nuts

Heat oil to 175°C and fry bread slices until deep golden brown, then drain. Fry cashews, almonds, and pistachios until golden brown, then chop roughly.

Prepare the milk mixture

Boil milk until volume reduces by half, then add evaporated milk, sugar, cardamom, and saffron. Simmer 5-10 minutes until thickened, then cool completely.

Assemble and chill

Arrange fried bread in a single layer in shallow dish. Pour cooled milk mixture evenly over bread. Scatter chopped nuts on top. Chill in refrigerator 1-2 hours until completely cold.
