Crispy Homemade French Fries

Instructions
Prepare the potatoes
Wash and peel the potatoes thoroughly.
Cut into fries
Cut potatoes into uniform 1cm thick strips for even cooking.
Rinse the fries
Place cut fries in cold water and rinse thoroughly to remove excess starch.
Heat the oil
Heat sunflower oil in a deep pot to 160°C for the first fry.
First fry (blanching)
Fry potatoes in batches for 5-6 minutes until soft but not colored.
Rest the fries
Remove fries and let them rest for 10 minutes to cool slightly.
Heat oil for second fry
Increase oil temperature to 180°C for the final fry.
Final fry for crispiness
Fry the potatoes again for 2-3 minutes until golden brown and crispy.
Season and serve
Drain excess oil and immediately season with salt while hot.

Storage
Best enjoyed fresh. Frozen fries can be reheated directly from frozen. Store uncooked cut potatoes in water in fridge for up to 24 hours.
