Spooky Fudgy Stuffed Oreo Brownies

Instructions
Preheat oven
Preheat your oven to 350°F (175°C) and line an 8x8 baking pan with parchment paper.
Melt butter
In a pan over low heat, melt the butter. Remove from heat and let it cool for a minute or two until warm but not hot.
Mix wet ingredients
Whisk in the oil, granulated sugar, and brown sugar for a full minute until glossy. Add the eggs, egg yolk, and vanilla and whisk for another full minute until the mixture looks pale and slightly thick.
Add dry ingredients
Sift in the flour, cocoa powder, espresso powder, and salt. Gently fold until just combined, being careful not to overmix.
Fold in chocolate and Oreos
Fold in chocolate chips and chopped Oreos, reserving some whole Oreos for the middle layer.
Layer batter and Oreos
Pour half the batter into the lined 8x8 pan and smooth it out. Add a layer of 9 whole Oreos, then smooth the remaining batter evenly on top. Sprinkle the remaining chopped Oreos on top.
Bake brownies
Bake for 40-45 minutes until the edges are set and puffed, and the center looks soft but not liquid.
Cool completely
Remove from the oven and let cool for at least 30-45 minutes so the brownies can fully set before slicing.
