Equipment
Ingredients
Main
fettuccine or penne pasta (dry)
400 g
ribeye or sirloin steak (room temperature)
400 g
garlic cloves (minced)
6 cloves
olive oil
3 tbsp
butter
2 tbsp
parmesan cheese (grated)
80 g
red chili flakes
1 tsp
black pepper
0.5 tsp
salt
1 tsp
fresh parsley (chopped)
15 g
Instructions
Cook the pasta
Bring a large pot of salted water to boil and cook pasta until al dente.
Prepare the steak
Pat steak dry and season generously with salt and black pepper on both sides.
Sear the steak
Heat olive oil in a large pan over medium-high heat. Add steak and cook 3-4 minutes per side for medium-rare.
Rest and slice steak
Remove steak from pan, let rest 5 minutes, then slice against the grain into thin strips.
Make the garlic sauce
In the same pan, reduce heat to medium. Add butter, minced garlic, and chili flakes. Cook until fragrant, about 1 minute.
Combine pasta and sauce
Add drained pasta to the pan with garlic sauce. Toss to coat evenly. Add a splash of pasta water if needed.
Add steak and cheese
Add sliced steak back to the pan. Sprinkle with grated parmesan and toss everything together. Garnish with chopped parsley.
Serve hot
Plate immediately and serve with extra parmesan and chili flakes on the side.
