Instructions
Cream butter and sugars
Beat butter with both sugars until light and fluffy, 3-4 minutes on medium speed.
Add eggs and vanilla
Beat in eggs one at a time, then vanilla until fully incorporated.
Mix dry ingredients
Whisk flour, baking soda and salt together in separate bowl.
Combine wet and dry
Gradually add flour mixture to butter mixture on low speed until just combined.
Fold in chocolate chips
Stir chocolate chips into dough by hand with spatula until evenly distributed.
Chill dough
Cover bowl and refrigerate dough for 20 minutes to prevent spreading.
Preheat oven
Preheat oven to 190°C (375°F) and line two baking sheets with parchment paper.
Scoop and bake
Scoop 2-tbsp portions onto prepared sheets, spacing 5 cm apart. Bake 9-11 minutes until edges are golden but centers still look slightly underdone.
Cool cookies
Let cookies rest on baking sheet 5 minutes, then transfer to wire rack to cool completely.
