Prepare batter

Mix kefir with baking soda in a bowl. Add egg, flour and sweetener, then stir until smooth.

Pour in boiling water and vegetable oil, then mix thoroughly until batter is smooth and homogeneous.

Heat a non-stick pan over high heat. Pour batter to form pancakes and cook until bubbles appear on the surface, then flip and cook the other side until golden brown.
