Chocolate Lava Cake

Instructions
Preheat oven and prepare ramekins
Preheat the oven to 220°C and generously butter four small ramekins.
Melt chocolate and butter
Place the chopped dark chocolate and butter in a heatproof bowl set over a pan of gently simmering water. Stir until completely melted and smooth.
Combine eggs and sugar
In a separate bowl, whisk the eggs and granulated sugar until pale and slightly thickened.
Combine mixtures and add flour
Fold the melted chocolate mixture into the egg mixture. Sift in the flour and salt, then gently fold until just combined.
Bake the cakes
Divide the batter evenly between the prepared ramekins. Bake for 10-12 minutes until the edges are set but the centers still jiggle slightly.
Invert and serve
Let the cakes rest for 1 minute, then carefully invert each onto a plate. Serve immediately while the center is still molten.
