Crispy Chicken Caesar Wraps

Instructions
Prepare Caesar dressing
Mash garlic, anchovy paste and black pepper into a rough paste. Mix in mayonnaise, lemon juice, Worcestershire, Dijon, salt, hot sauce, red wine vinegar and parmesan. Refrigerate.
Prepare chicken cutlets
Slice each chicken breast horizontally into 2 thin cutlets. Season both sides with paprika, garlic powder, seasoning salt, onion powder, black pepper and a drizzle of neutral oil.
Set up breading station
Prepare three bowls: seasoned flour mixture, beaten eggs, and finely crushed Parmesan Garlic Almond Flour Crackers.
Bread the chicken
Coat each cutlet: flour → egg → crushed cracker crumbs, pressing crumbs firmly to help them stick.
Fry the chicken
Heat neutral oil in large skillet over medium-high heat to 175°C. Fry cutlets in batches for 3-4 minutes per side until golden and cooked through.
Rest and slice chicken
Remove fried chicken from oil, let rest for 5 minutes, then slice into strips.
Prepare romaine salad
Toss chopped romaine lettuce with Caesar dressing until well coated. Top with extra parmesan.
Warm tortillas
Lightly pan-fry tortillas with butter until warm and pliable.
Assemble wraps
Layer sliced chicken, dressed romaine salad, and extra parmesan on each tortilla. Wrap tightly and serve immediately.
