Roasted Baby Potatoes
baby potatoes (quartered)

avocado oil

For the Bowls
romaine lettuce (chopped)
2 head
cherry tomatoes (halved)

cheddar cheese (shredded)

Instructions
Soak the potatoes
Add quartered baby potatoes to a large bowl with cold water. Let them soak for 30 minutes to make them super crispy.
Preheat oven
Preheat the oven to 220°C.
Dry the potatoes
Drain off the water and pat the potatoes dry VERY well with paper towels.
Season and roast the potatoes
Add baby potatoes to a baking sheet lined with parchment paper. Drizzle with avocado oil and season with kosher salt & black pepper. Toss to coat and spread them out so there is no overlap.
Cook the ground beef
While the potatoes are roasting, bring a large pan to medium heat. Once hot, add the avocado oil if needed. Add the ground beef, break it apart into small pieces, add all seasonings and stir to combine. Cook until browned and done through.
Assemble the bowls
Assemble your burger bowls starting with a bed of romaine, the cooked ground beef, roasted baby potatoes, cherry tomatoes, shredded cheddar, pickled red onions and sliced avocado. Top with a hefty drizzle of special sauce.
Storage
Store toppings separately to prevent wilting. Assemble just before eating.
