Baked Cod with Tomato-Olive Relish

Instructions
Prepare ingredients
Chop tomatoes, slice olives, mince garlic and chop parsley.
Season the cod
Drizzle cod fillets with olive oil, season with salt and pepper, and squeeze lemon juice over them.
Prepare zucchini
Slice zucchini into thin rounds.
Make tomato-olive relish
Combine chopped tomatoes, olives, garlic and parsley in a bowl. Add 1 tablespoon olive oil and season with salt and pepper.
Bake the cod
Place seasoned cod and zucchini slices on a baking sheet. Bake in a preheated oven at 200°C for 15 minutes until fish is opaque and flakes easily.
Serve
Plate the baked cod with zucchini and top generously with the tomato-olive relish. Garnish with fresh parsley.
Storage
Best served fresh. Relish can be made ahead and stored separately.
