Boil the potatoes

Wash and boil the potatoes until they are tender but firm.

Prepare the potatoes

Peel and cut the boiled potatoes into cubes or wedges.

Temper the spices

Heat oil in a pan, add jeera and green chillies, and let them splutter.

Add dry spices

Add red chilli powder, turmeric, coriander powder, jeera powder, amchur, salt and sugar. Mix well.

Add potatoes and coat

Add the potato cubes and mix gently to coat with the spices.

Add water and simmer

Pour in water, cover and simmer for 5 minutes so the spices absorb into the potatoes.

Finish with herbs and lemon

Turn off heat, crush kasuri methi between palms and sprinkle over. Add lemon juice and fresh coriander. Mix gently.

Transfer to a serving bowl and serve immediately.
