High-Protein Chocolate Protein Muffins

Instructions
Crack the eggs
Crack 2 eggs into a large mixing bowl.
Add wet ingredients
Add 120 g coconut milk and 200 g Greek yogurt to the eggs and mix until smooth.
Add protein powder and sweetener
Add protein powder and sweetener and mix again until fully incorporated.
Sift dry ingredients
Sift cocoa powder and baking powder into the mixture.
Add oat flour
Add oat flour and stir until you get a thick but slightly pourable batter. Add 1–2 tablespoons of milk if too thick.
Fold in chocolate chips
Gently fold in the dark chocolate chips.
Divide batter
Divide the batter evenly between 9 muffin cups.
Bake
Bake at 180°C for 15–17 minutes until a toothpick inserted in the center comes out clean.
