Crispy Spam and Egg Musubi

teriyaki sauce

Instructions
Cook the rice
Cook Japanese white rice according to package instructions until fluffy. Let it cool slightly.
Prepare spam slices
Slice spam into 4 even pieces. Fry in a pan until golden and slightly crispy on both sides.
Glaze spam with teriyaki
Pour teriyaki sauce into the pan with spam and let it simmer until the sauce thickens and coats the spam.
Fry the eggs
Fry eggs sunny side up or over easy until whites are set but yolks remain slightly runny.
Assemble musubi
Place a portion of rice on a nori sheet, top with glazed spam slice and fried egg. Fold nori around the filling to form a musubi.
Wrap in rice paper and fry
Wrap each musubi in rice paper. Heat oil in a pan and quickly fry each wrapped musubi until the rice paper is golden and crispy.
