Crispy Sweet Chilli Chicken

chicken breast (cut into bite-sized pieces)

Sweet Chilli Sauce

soy sauce

garlic (minced)

ginger (grated)

Instructions
Prepare chicken
Cut chicken breast into bite-sized pieces and season with salt and pepper.
Coat chicken
Toss chicken pieces in cornstarch until fully coated, then dip in beaten egg.
Fry chicken
Heat oil in a pan or wok and fry chicken pieces until golden and crispy, about 6-8 minutes.
Make sauce
In the same pan, add minced garlic and grated ginger, cook 30 seconds. Add sweet chilli sauce, soy sauce and lime juice. Simmer 2 minutes.
Combine and serve
Return crispy chicken to the pan and toss to coat evenly in the sauce. Garnish with sesame seeds and sliced green onions.
Storage
Best eaten fresh. Sauce may separate when reheated.
