Prepare equipment and dry ingredients

Set up a heavy-bottomed pot with a rack or trivet inside. Line a 6-inch cake tin with parchment paper. Mix all dry ingredients together.

Whip eggs and sugar

Beat eggs and sugar together until thick, pale and tripled in volume (about 5-7 minutes of vigorous whisking).

Add oil and milk

Gently fold in oil and milk until just combined.

Combine with dry ingredients

Sift dry ingredients over the wet mixture in two batches and gently fold until smooth and lump-free.

Bake on stovetop

Pour batter into prepared tin, place on rack inside pot, cover with tight lid. Cook on lowest heat for 30-35 minutes until a toothpick comes out clean.

Remove tin from pot, let cake cool in tin 5 minutes, then transfer to a wire rack.
