Homemade Bagels

Instructions
Mix the dough
Combine flour, yeast, sugar, and salt in a large bowl. Gradually add warm water while mixing until a rough dough forms.
Knead the dough
Turn the dough onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
First rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise until doubled in size, about 1 hour.
Shape the bagels
Divide the dough into 8 equal pieces. Roll each piece into a rope about 20cm long, then form into a ring by overlapping the ends and pressing to seal.
Second rise
Place shaped bagels on a parchment-lined baking sheet, cover, and let rest for 20 minutes.
Prepare boiling solution
Bring a large pot of water to boil. Add sugar and baking soda to the boiling water.
Boil the bagels
Carefully drop 2-3 bagels at a time into the boiling water. Boil for 1 minute on each side.
Add topping
Remove bagels from water and place on baking sheet. Sprinkle with sesame seeds while still wet.
Bake the bagels
Bake in a preheated 220°C oven for 20-25 minutes until golden brown.
