Peel and chop the carrots and potatoes into even chunks. Dice the onion, mince the garlic, and grate the fresh ginger.

Heat olive oil in a pot over medium heat. Add the diced onion, minced garlic, and grated ginger. Cook until the onion becomes translucent and fragrant.

Add vegetables and broth

Add the chopped carrots and potatoes to the pot, then pour in the warm vegetable broth. Season with salt and black pepper.
