Homemade Chicken Gyros with Flatbread and Tzatziki

Instructions
Prepare Chicken Marinade
Slice chicken breast into thin strips. Mix with Greek yogurt, minced garlic, oregano and thyme. Let marinate for 15 minutes while preparing other components.
Make Flatbread Dough
Combine plain flour and Greek yogurt in a bowl. Mix until a dough forms. Knead briefly on a floured surface until smooth.
Prepare Potato Chips
Slice potatoes thinly. Toss with salt, oregano, thyme and a few sprays of oil.
Cook Potato Chips
Air fry potato slices at 200°C until golden and crispy.
Cook Flatbread
Divide dough into portions and roll out thinly. Pan fry each side for 5-7 minutes until golden.
Cook Chicken
Pan fry marinated chicken strips until cooked through and golden.
Make Tzatziki
Grate cucumber and drain excess liquid. Mix with Greek yogurt, minced garlic, lemon juice, salt and chopped dill.
Prepare Toppings and Assemble
Slice cucumber, red onion and prepare rocket and feta. Assemble gyros: flatbread topped with chicken, tzatziki, chips and toppings.

Best eaten fresh. Flatbread can be frozen. Reheat chicken separately from toppings.
