Soft & Chewy Lemon Cookies

Instructions
Cream butter and sugar
In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3 minutes.
Add wet ingredients
Mix in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
Combine dry ingredients
In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
Mix dough
Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
Chill dough
Cover bowl and refrigerate dough for 15 minutes to firm up.
Preheat oven
Preheat oven to 175°C and line baking sheets with parchment paper.
Scoop and bake
Scoop tablespoon-sized balls of dough onto prepared baking sheets, spacing 5 cm apart.
Cool cookies
Allow cookies to cool on baking sheet for 5 minutes before transferring to wire rack.
