silken tofu

Instructions

Prepare silken tofu cream

Blend water, silken tofu, nutritional yeast, miso and Dijon mustard until smooth and creamy.

Sauté onion

Heat a pan and sauté the chopped onion until translucent.

Add spices and pastes

Add potato seasoning, tomato paste and harissa paste to the pan and stir well.

Add sun-dried tomatoes

Add the chopped sun-dried tomatoes and mix well with the onion mixture.

Add beans and tomatoes

Add the drained butter beans, silken tofu cream mixture and tinned tomatoes to the pan.

Let everything simmer together for 5 minutes to allow flavors to combine.

Add spinach and chopped basil, stir until spinach wilts, then season with salt and pepper to taste.
