Desi Cheesy Pasta with Aakhri Masala

Aakhri Masala spice mix

Instructions
Boil the pasta
Bring a large pot of salted water to boil and cook pasta until al dente.
Prepare the vegetables
Finely chop onion, mince garlic and dice bell pepper if using.
Make the white sauce base
Melt butter in a pan, add flour and cook for 1 minute to form a roux.
Add milk and spices
Gradually whisk in milk, add Aakhri Masala, salt and pepper. Cook until sauce thickens.
Sauté the aromatics
In the same pan, sauté onion and garlic until fragrant, then add bell pepper if using.
Combine pasta and sauce
Add cooked pasta to the sauce, toss to coat evenly, then stir in grated cheese until melted.
Serve hot
Serve immediately while hot and creamy.
