Beef

beef (thinly sliced)

Pasta

pasta (cooked al dente)

Vegetables

carrot (sliced into strips)

red bell pepper (sliced into strips)

green bell pepper (sliced into strips)

white onion (sliced)

garlic (minced)

scallions (chopped)

Fried Plantains

plantains (cubed, fried until crispy)

Sauce

hoisin sauce

2 tbsp

oyster sauce

1.5 tbsp

dark soy sauce

1 tbsp

chilli flakes

2 tsp

white pepper

1 tsp

smoked paprika

1 tbsp

Instructions

Prepare and season the beef

Slice beef thinly and season with onion powder, white pepper, hot pepper, beef bouillon and smoked paprika.

Cook the pasta

Cook pasta in salted water until al dente. Reserve some pasta water before draining.

Stir-fry the beef

Heat oil in a pan over medium heat. Add seasoned beef and stir-fry until cooked through, then remove and set aside.

Prepare vegetables

In the same pan, add sliced white onion and stir-fry until soft. Add minced garlic and cook briefly.

Add carrots and peppers

Add carrot strips and stir-fry until slightly toasted. Add red and green bell pepper strips and stir-fry until tender.

Prepare the sauce

Add hoisin sauce, oyster sauce, dark soy sauce, chilli flakes, white pepper, and smoked paprika to the vegetables. Add pasta water to loosen the sauce as needed.

Combine beef and pasta

Return the cooked beef to the pan and mix with the vegetables and sauce. Add the cooked al dente pasta and toss until everything is combined and coated in the sauce.

Prepare plantains and finish

Cube plantains and fry until crispy. Just before serving, top the pasta with fried plantains and chopped scallions.

Reheat: Microwave 2-3 minutes or reheat in pan over medium heat

Best served fresh. Plantains lose crispness when stored.
