Instructions
Prepare oven and pan
Preheat the oven to 180°C and line a mini muffin tin with paper liners or lightly grease.
Mix dry ingredients
In a large bowl, combine ground oats, all-purpose flour, baking powder, baking soda, salt, and sugar.
Mix wet ingredients
In a separate bowl, whisk together the egg, milk, melted butter, and vanilla extract.
Combine wet and dry ingredients
Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix.
Add chocolate chips
Gently fold in the chocolate chips, reserving a few for topping.
Fill muffin cups
Spoon the batter into the prepared mini muffin cups, filling each about 3/4 full. Top with reserved chocolate chips.
Bake the muffins
Bake in the preheated oven for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
Cool the muffins
Allow the muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
