Homemade Apple Candies
Chewy homemade apple candies made from just apples, sugar, and a hint of lemon — a perfect way to use up a big apple harvest.

Instructions
Prepare apples
Wash apples, peel, core and chop into pieces.
Cook apples
Place chopped apples in a large pot, add water and heat on low until completely soft.
Blend apples
Blend softened apples with an immersion blender into a smooth puree.
Add sugar and lemon
Add 1 kg sugar and lemon juice to the puree and mix well.
Cook until thickened
Cook the mixture on low heat, stirring regularly, until significantly thickened. This may take 1–1.5 hours depending on apple juiciness.
Prepare baking tray
Line a baking sheet with parchment paper. Spread the apple mixture into a 1–1.5 cm thick layer.
Dry in oven
Dry at 70–80 °C for about 5–8 hours. If the oven is not convection, leave the door slightly ajar to release moisture.
Cool completely
When the mixture is firm and no longer sticky to the touch, remove and let cool completely.
Cut into pieces
Cut into small cubes, diamonds or strips.
Coat candies
If desired, roll the candies in fine sugar or coconut flakes.
