Ingredients
Dough
potatoes (peeled, cooked)

all-purpose flour

egg

parmesan cheese (grated)

Instructions
Prepare potatoes
Boil the potatoes until soft, then drain and mash them until smooth.
Make the dough
Mix mashed potatoes with flour, egg and salt to form a soft dough.
Shape the nyoquis
Roll the dough into long ropes and cut into bite-sized pieces. Optionally press with a fork for texture.
Cook the nyoquis
Bring a pot of salted water to a boil and cook the nyoquis until they float to the surface.
Prepare the sauce
Melt butter in a pan, add grated parmesan and black pepper to create a creamy sauce.
Combine and serve
Drain the nyoquis and toss them gently in the sauce until evenly coated. Serve immediately.

Storage
Uncooked nyoquis can be frozen on a tray then transferred to a bag. Cook directly from frozen.
