One Pan Poached Salmon with Spicy Harissa Chickpeas

A complete one-pan meal featuring tender poached salmon nestled in a spicy harissa chickpea sauce with wilted spinach - ready in under 30 minutes with minimal cleanup.

canned chickpeas (drained, rinsed)

harissa paste

Instructions
Prepare the harissa sauce base
Heat olive oil in a large pan and sauté minced garlic until fragrant.
Add chickpeas and harissa
Add the drained chickpeas and harissa paste to the pan, stirring to coat evenly.
Create poaching liquid
Add 200ml water, lemon juice, salt and pepper to create the poaching liquid.
Poach the salmon
Gently place salmon fillets skin-side down into the simmering liquid, cover and poach for 8-10 minutes until cooked through.
Add spinach and finish
Stir in fresh spinach until wilted, about 1 minute. Serve immediately with lemon wedges.
