Ingredients

Macaron Shells

almond flour (fine, sifted)

Prepare baking sheets

Line two baking sheets with silicone baking mats or parchment paper templates.

Sift dry ingredients

Sift almond flour and powdered sugar together into a large bowl. Repeat sifting 2-3 times to remove lumps.

Whip egg whites

In a clean bowl, beat egg whites on medium speed until foamy. Gradually add granulated sugar while beating.

Add flavoring and color

Add vanilla extract and food coloring gel. Beat until stiff peaks form and mixture is glossy.

Macaronage - fold meringue

Add half the meringue to dry ingredients. Fold gently until combined. Add remaining meringue and fold until batter flows like lava off the spatula.

Pipe macaron shells

Pipe 1.5-inch circles onto prepared baking sheets, leaving space between each macaron.

Let piped shells rest at room temperature until a skin forms on top (they should not stick to your finger when touched).

Bake at 150°C for 15-18 minutes until shells are set and feet have formed. Rotate pan halfway through baking.
