Instructions

Prepare vegetables

Dice the onion and capsicum, mince the garlic and ginger, and slice the green chillies.

Coat paneer with cornflour

Toss paneer cubes in cornflour to create a light crispy coating.

Fry paneer

Shallow-fry the coated paneer cubes until golden and crispy on all sides.

Sauté aromatics

In the same pan, quickly stir-fry garlic, ginger, and green chillies until fragrant.

Add vegetables

Add diced onion and capsicum; stir-fry for 2 minutes to retain crunch.

Prepare sauce

Mix tomato ketchup, red chilli sauce, schezwan chutney, dark soy sauce, sugar, water, salt, and pepper.

Combine paneer and sauce

Return fried paneer to the pan, pour in the sauce, and toss until everything is well coated and glossy.
