Banana Bread Waffles
Ingredients
Batter
Banana (mashed)
2 piece
Egg
1 piece
Spelt flour
175 g
Cinnamon
1 tsp
Baking soda
0.5 tsp
Baking powder
0.25 tsp
Coconut yogurt
90 g
Olive oil
50 ml
Coconut sugar
50 g
Plant milk
2.5 tbsp
Salt
1 pinch
Toppings
Butter
1 tbsp
Maple syrup
2 tbsp
Instructions
Prepare wet ingredients
Mash the bananas and whisk with the yoghurt, oil, sugar, egg, salt and milk.
Mix dry ingredients
Fold in the flour, baking powder, baking soda, cinnamon until just combined.
Heat waffle iron
Heat up the waffle iron and spray with cooking spray.
Cook waffles
Use 1 regular ice cream scoop for each mini waffle. Cook until crispy and golden.
Repeat cooking
Repeat the cooking process for all waffles.
Serve
Enjoy with toppings of choice (vegan salted butter and maple syrup).
