Prepare Ingredients

Cut cherry tomatoes in half, mince shallot and garlic cloves, juice the lemon, and chop fresh parsley.

Season the Cod

Season cod fillets with salt, black pepper, garlic powder, onion powder, paprika, and dried oregano on both sides.

Cook the Cod

Melt 2 tablespoons of butter in a large pan over medium heat. Add seasoned cod fillets and cook for 3-4 minutes per side until golden and cooked through.

Make the Piccata Sauce

Remove cod from pan. In the same pan, add remaining 2 tablespoons butter, minced shallot and garlic. Cook for 1 minute, then add white wine, lemon juice, and capers. Simmer for 2-3 minutes until slightly reduced.

Finish and Serve

Return cod to pan with halved cherry tomatoes. Spoon sauce over fish and cook for 1 minute. Garnish with fresh chopped parsley and serve immediately.
