Brown Bread at Home
A hearty, slightly sweet homemade brown bread with rich molasses flavor and a dense, moist crumb.

Dough
whole wheat flour (sifted)

bread flour (sifted)

active dry yeast (room_temperature)

brown sugar (packed)

molasses (room_temperature)

unsalted butter (melted)

warm water (warm)

Instructions
Activate the yeast
Dissolve yeast in warm water with a pinch of sugar and let it foam.
Mix dry ingredients
Combine flours, salt, and brown sugar in a large bowl.
Combine wet ingredients
Add molasses and melted butter to the activated yeast.
Knead the dough
Gradually add the wet mixture to the dry ingredients and knead until smooth and elastic.
First rise
Place dough in a lightly oiled bowl, cover, and let rise until doubled.
Shape the loaf
Punch down dough, shape into a loaf, and place in a greased 23×13 cm loaf pan.
Second rise
Cover and let the shaped loaf rise until it crowns the pan.
Preheat oven
Preheat oven to 190°C.
Bake the bread
Bake for 40–45 minutes until the loaf sounds hollow when tapped.
Cool and slice
Cool in the pan 10 minutes, then on a rack before slicing.
