Camembert and Mango Puff Pastry

Mango (ripe, peeled, sliced)

Puff pastry sheet (thawed)

Instructions
Prepare ingredients
Preheat oven to 200°C. Slice mango and squeeze lemon juice over slices to prevent browning. Lightly flour work surface.
Assemble pastry
Roll out puff pastry slightly. Place whole Camembert in center. Arrange mango slices on top of cheese. Drizzle with lemon juice and sprinkle brown sugar and black pepper.
Wrap and seal
Fold pastry edges over cheese to completely enclose. Brush with beaten egg for golden color. Place on lined baking sheet.
Bake the pastry
Bake at 200°C for 15 minutes until pastry is golden and puffed. Cheese should be soft and beginning to melt inside.
Serve immediately
Remove from oven and let rest 2 minutes. Cut into portions and serve warm while cheese is still gooey.
