Ingredients

Batter

kefir (room_temperature)

260 ml

wheat flour (sifted)

200 g

egg (large)

1 piece

salt

1 pinch

baking soda

0.5 tsp

sugar (granulated)

1 tbsp

Instructions

1

Mix egg with sugar and salt

In a bowl, whisk together the egg, sugar and salt until well combined.

2 min
2

Warm and add kefir

Gently warm the kefir until lukewarm (not hot, not cold) and stir into the egg mixture.

3 minLow heat
Kefir should be lukewarm — too hot will cook the egg, too cold will slow the reaction.
3

Add flour

Gradually add the sifted flour and mix thoroughly until smooth.

3 min
Mix until no lumps remain for the fluffiest texture.
4

Add baking soda and rest

Stir in the baking soda, mix gently, then let the batter rest for 20 minutes.

20 mintimer 20 min
Resting allows the baking soda to activate and improves fluffiness.
5

Transfer to piping bag (optional)

For perfectly round pancakes, transfer the thick batter to a piping bag.

2 min
If you don't have a piping bag, a zip-top bag with the corner cut works too.
6

Cook the pancakes

Heat a lightly greased pan over medium-low heat and cook each pancake for 1.5 minutes per side until golden.

Do not flip until bubbles appear and edges look set.
