Instructions

1

Prepare sushi rice

Cook and season the sushi rice with sushi vinegar, then let it cool to room temperature.

15 mintimer 10 min
Rice should be sticky but not mushy for proper rolling
2

Prepare coating mixture

In a bowl, combine the flour, cornstarch, and enough water to make a smooth slurry. Place the panko breadcrumbs in a separate bowl.

3 min
Slurry should be thick enough to coat but not lumpy
3

Assemble burrito base

Lay a nori sheet on a clean surface. Spread a thin layer of sushi rice over the entire sheet, leaving about 1 inch uncovered at the top.

5 min
Wet hands with water to prevent rice from sticking
4

Add filling

Arrange the cucumber, avocado, cream cheese, and sashimi-grade salmon across the center.

3 min
Don't overfill to ensure proper rolling
5

Roll the burrito

Roll the nori tightly into a burrito, sealing the edge with a little flour slurry.

2 min
Roll firmly but gently to avoid breaking nori
6

Coat with panko

Coat the entire burrito in the flour slurry, then roll it in the Japanese panko breadcrumbs until evenly coated.

3 min
Press breadcrumbs gently to ensure they stick well
7

Fry the burrito

Heat oil in a pan and fry the burrito until golden brown and crispy on all sides. Transfer to a paper towel-lined plate.

6 minMedium-high heattimer 6 min
Turn frequently to ensure even browning on all sides
8

Serve

Slice in half and drizzle with sriracha mayo and eel sauce. Finish with a sprinkle of furikake and enjoy immediately while crispy.

2 min
Serve immediately for maximum crispiness

Storage

Fridge: 1 days
Reheat: Oven 180°C for 5-7 minutes to restore crispiness

Best consumed immediately after frying for optimal texture. Reheating may reduce crispiness.
