Dredge the chicken

Slice chicken breasts into cutlets. Season flour with salt and pepper. Dredge chicken in the seasoned flour, shaking off any excess.

Brown the chicken

Heat olive oil and butter in a heavy-bottomed pan over medium heat. Brown the chicken cutlets on both sides until golden brown.

Sauté garlic

Remove chicken to a plate. In the same pan, sauté minced garlic for 1 minute until fragrant.

Make the sauce

Deglaze the pan with chicken stock, scraping up the browned bits. Add heavy cream and parmesan cheese. Simmer for 2-3 minutes, then season with chili flakes, oregano, thyme, salt and pepper.

Finish the dish

Add sun-dried tomatoes to the sauce. Return chicken to the pan and simmer for 3-5 minutes until sauce thickens and chicken is cooked through.

Garnish and serve

Garnish with fresh basil leaves. Serve immediately over pasta, rice, or mashed potatoes.

Reheat: Microwave 2-3 minutes or oven at 180°C for 10 minutes, add a splash of water to thin the sauce
