Cookies Over Ice Cream

Instructions
Preheat oven
Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.
Mix wet ingredients
In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy.
Add egg and vanilla
Beat in the egg and vanilla extract until well combined.
Combine dry ingredients
In a separate bowl, whisk together flour, baking soda, and salt.
Combine wet and dry
Gradually add the dry ingredients to the wet mixture and stir until just combined.
Add chocolate chips
Fold in chocolate chips until evenly distributed throughout the dough.
Scoop and bake cookies
Scoop dough onto the prepared baking sheet, spacing cookies 5 cm apart. Bake for 10-12 minutes until edges are golden.
Cool cookies
Remove from oven and let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Assemble and serve
Place a scoop of vanilla ice cream between two warm cookies to create a sandwich, or serve cookies alongside ice cream.
Storage
Store cookies in an airtight container. Ice cream should be kept frozen. Assemble just before serving for best texture.
