Instructions
Preheat oven
Preheat oven to 175°C (350°F).
Mix wet ingredients
In a mixing bowl, combine all wet ingredients: Greek yogurt, egg, egg white, and vanilla extract. Mix until smooth.
Mix dry ingredients
In a separate bowl, combine all dry ingredients: flour, protein powder, oat flour, sugar substitute, baking soda, and salt. Mix well.
Combine wet and dry ingredients
Pour the wet mixture into the dry ingredients bowl and combine thoroughly until a thick batter forms with no clumps. Fold in chocolate chips.
Refrigerate batter
Refrigerate the batter for 15 minutes to firm it up before baking.
Prepare baking sheet
Line a baking sheet with parchment paper and lightly spray with cooking spray. Spread the chilled batter evenly on the prepared sheet.
Add toppings
Sprinkle additional chocolate chips on top if desired.
Bake blondies
Bake at 175°C for 15 minutes until slightly underdone. The bars will continue to set as they cool.
Cool and cut
Remove from oven and let cool completely. Cut into 88 pieces (8x11 grid).
