Fry onions

Heat 1 cup oil in a wok, add thinly sliced onions and fry until brown and crispy.

Sauté aromatics and chicken

Remove more than half the fried onions and set aside. Add ginger garlic paste to the remaining oil and fry until aromatic, then add chicken and fry until it turns white.

Add spices and tomato-chili blend

Add all mentioned spices except the freshly ground whole spices. Blend tomatoes and green chilies, then add to the chicken along with lemon slices and whisked yogurt.

Simmer gravy

Cook the mixture on medium flame until the water evaporates, oil separates, and chicken becomes tender.

Prepare and add potatoes

Separately boil potatoes until tender. Add them to the gravy along with ½ cup water and orange food color. Cook for 1 minute then turn off the heat.

Finish gravy with herbs

Add chopped fried brown onions, mint, coriander and remaining green chilies to the gravy. Reserve some herbs for topping.

Parboil rice

Bring water to a boil in a separate wok, add salt and soaked basmati rice. Boil until 70% done, then strain.

Layer and steam biryani

Place the strained rice on top of the gravy. Drizzle with 3 tbsp oil or ghee. Cover and cook on high flame for 5-7 minutes, then reduce to medium-low and simmer for 20 minutes.
