Instructions
Prepare ingredients
Gather and measure all ingredients. Ensure potatoes are boiled and cooled.
Mash the potatoes
Mash the boiled potatoes in a large bowl until smooth with no large lumps remaining.
Add dry ingredients
Add potato starch, onion powder, garlic powder, paprika, cayenne pepper, salt and pepper to the mashed potatoes. Mix well to combine.
Form the pancakes
Divide the potato mixture into 8 portions. Flatten each portion and place a slice of mozzarella in the center. Fold the potato mixture around the cheese to enclose it completely, then flatten into a pancake shape.
Heat the pan
Heat a non-stick pan over medium heat with a thin layer of oil.
Fry the pancakes
Cook the pancakes in batches for 3-4 minutes on each side until golden brown and crispy. The cheese inside should be melted.
Serve hot
Serve the cheesy potato pancakes immediately while hot and the cheese is still gooey.
