Burger Sauce

mayonnaise (room temperature)

Prepare burger sauce

Mix all sauce ingredients in a small bowl until well combined.

Taste and adjust seasoning - you can add a pinch of garlic powder or paprika

Prepare toppings

Dice onion and tomato, shred lettuce, and slice pickles for assembly.

Form meat balls

Divide ground beef into 8 equal portions and roll into loose balls without overworking the meat.

Don't pack the meat too tightly - loose balls create better texture when smashed

Heat the pan

Heat a large cast iron or non-stick pan over medium-high heat until very hot.

Smash the burgers

Place 2-3 meat balls in the hot pan, top each with a tortilla, and press down firmly with a spatula or burger press to flatten into a thin patty.

Press hard and hold for 10 seconds to create maximum surface contact

Add cheese and flip

Flip each burger-tortilla combo and immediately top the meat side with cheese. Cook for 1-2 minutes until cheese melts.

Assemble tacos

Remove from heat and top each taco with burger sauce, diced onion, tomato, shredded lettuce, and sliced pickles.
