Instructions
Cook the pasta
Bring a pot of salted water to a boil and cook the pasta until al dente according to package instructions.
Cool the pasta
Drain the pasta and rinse briefly under cold water to stop cooking and cool it down.
Prepare vegetables
Wash and chop the cherry tomatoes, cucumber, and bell pepper into bite-sized pieces.
Assemble the jars
In each jar, layer the ingredients starting with 1-2 tablespoons of pesto at the bottom, then pasta, chopped vegetables, vegan feta if using, and finally the spinach on top.
Storage
Store jars upright in the fridge. Shake well before eating to distribute the pesto dressing.
Notes
• Layering order is crucial: dressing at the bottom, greens on top prevents sogginess
