Raspberry Chia Bites
Fresh, naturally sweet raspberry-chia bites coated in dark chocolate. A healthy freezer treat packed with fiber and antioxidants.

Raspberry Layer
raspberries (fresh)

chia seeds
30 g
maple syrup
30 ml
Chocolate Coating
dark chocolate (chopped)

coconut oil

Instructions
Prepare raspberry-chia mixture
Mash fresh raspberries and mix with chia seeds and maple syrup until well combined.
Chill raspberry mixture
Place the bowl in the refrigerator and let the chia seeds absorb the liquid and thicken for 30 minutes.
Shape the bites
Scoop small portions of the thickened mixture and roll into bite-sized balls or form small discs.
Freeze the bites
Place the formed bites on a parchment-lined tray and freeze for 30 minutes until firm.
Melt the chocolate
Melt dark chocolate with coconut oil in short microwave bursts or over a double boiler until smooth.
Coat the bites
Dip each frozen bite into melted chocolate using a fork, letting excess drip off. Return to tray.
Final freeze
Freeze the chocolate-coated bites for another 15 minutes until the coating is set.
