Prepare the chicken

Butterfly the chicken breasts, dip in beaten egg and coat with seasoned breadcrumbs.

Cook the pasta

Bring a pot of salted water to boil and cook rigatoni according to package instructions.

Fry the breaded chicken

Heat oil in a pan over medium-high heat and fry the breaded chicken until golden brown, 4-5 minutes per side.

Make the vodka sauce

Sauté onion, add tomato paste, vodka, seasonings, pasta water, then cream. Simmer for 10 minutes.

Top chicken with vodka sauce and mozzarella, then air fry at 180°C for 10 minutes until golden.
